Description
This Cheesy Meat Potato Skillet is a hearty, one-pan comfort food made with layers of potatoes, ground beef, tomatoes, and plenty of melted cheese for a cozy weeknight dinner.
Ingredients
1 pound ground beef
1 tablespoon olive oil
1 medium onion, diced
2 garlic cloves, minced
1 can (14.5 ounces) diced tomatoes, drained
1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
4 medium yellow potatoes, thinly sliced
1 1/2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
1. Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground beef and onion, cooking until beef is browned and onion is softened, about 5-6 minutes.
2. Stir in garlic, diced tomatoes, paprika, oregano, salt, and pepper. Cook for another 2 minutes, allowing flavors to meld.
3. Remove skillet from heat and arrange sliced potatoes over the meat mixture in overlapping layers.
4. Sprinkle shredded cheese evenly over the top.
5. Cover the skillet with a lid or foil and cook over medium-low heat for 20-25 minutes, until the potatoes are tender.
6. For a golden top, place skillet under the broiler for 2-3 minutes until cheese is bubbly and slightly browned.
7. Garnish with fresh parsley and serve warm.
Notes
You can substitute ground turkey or sausage for the beef.
Yukon gold or russet potatoes work best for even cooking.
For extra flavor, add a layer of sautéed bell peppers or mushrooms between the meat and potatoes.
Serve with a side salad or crusty bread for a complete meal.
