This Chickpea, Avocado, & Feta Salad is a refreshing and healthy dish that comes together in just 10 minutes with creamy avocado, tangy feta, and zesty lime.
Ingredients
15 ounces chickpeas, rinsed and drained
2 avocados, pitted and chopped
1/3 cup chopped cilantro
2 tablespoons green onion
1/3 cup feta cheese
Juice of 1 lime
Salt and black pepper, to taste
Instructions
1. In a medium bowl, combine chickpeas, avocado, cilantro, green onion, feta cheese, and lime juice.
2. Stir until well mixed.
3. Season with salt and pepper to taste.
4. Serve immediately.
Notes
Store leftovers in an airtight container in the fridge for up to 2 days.
For extra flavor, add diced cucumber, cherry tomatoes, or a drizzle of olive oil.
This salad works well as a side dish, light lunch, or stuffed into a pita wrap.
