Ingredients
1/4 cup gluten-free all-purpose flour blend
1 tbsp coconut sugar or brown sugar
1/4 tsp baking powder
1/4 tsp cinnamon
Pinch of salt
2 tbsp milk (dairy or non-dairy)
1 tbsp melted coconut oil or butter
1/4 tsp vanilla extract
For cinnamon swirl:
1 tsp coconut sugar or brown sugar
1/4 tsp cinnamon
1/2 tsp water
For glaze:
2 tbsp powdered sugar
1/2 tsp milk
Instructions
1. In a small bowl, mix together flour, sugar, baking powder, cinnamon, and salt.
2. Add milk, melted coconut oil, and vanilla extract. Stir until a smooth batter forms.
3. Pour batter into a greased microwave-safe mug.
4. In a separate bowl, mix swirl ingredients: sugar, cinnamon, and water.
5. Drizzle swirl mixture on top of the batter and use a toothpick to create a swirl pattern.
6. Microwave on high for 60–90 seconds, or until the center is set.
7. In a separate bowl, mix glaze ingredients until smooth and drizzle over warm mug cake.
8. Let cool slightly and enjoy directly from the mug.
Notes
Microwave times may vary depending on your appliance, so start with 60 seconds and check for doneness.
Add a dollop of cream cheese or dairy-free yogurt for a tangy twist.
Best enjoyed fresh but can be made with dairy-free and refined sugar-free swaps.
