Ingredients
1 lb ground beef (lean preferred)
4 medium potatoes, peeled and diced
1 medium onion, finely chopped
2 medium carrots, diced
2 celery stalks, chopped
3 cups chicken broth (or beef broth for deeper flavor)
2 cups milk
2 tbsp butter
2 tbsp all-purpose flour
2 cups shredded cheddar cheese
1 tsp garlic powder
1 tsp paprika
salt and black pepper, to taste
optional garnish: chopped green onions, extra cheese, or bacon bits
Instructions
1. In a large pot, brown the ground beef over medium heat. Drain excess fat and set aside.
2. In the same pot, melt butter. Add onion, carrots, and celery. Cook 5 minutes until softened.
3. Stir in flour and cook 1–2 minutes. Slowly whisk in chicken broth until smooth.
4. Add potatoes, garlic powder, and paprika. Simmer 15 minutes until potatoes are tender.
5. Pour in milk and return cooked beef to the pot. Stir and let simmer another 5 minutes.
6. Reduce heat to low. Add shredded cheddar cheese, stirring until melted and creamy.
7. Season with salt and pepper. Garnish with green onions, bacon, or extra cheese if desired.
Notes
✨ Shred your own cheese for a smoother melt. Don’t let soup boil after adding cheese.
For extra richness, replace some milk with cream.
Store in fridge up to 3 days or freezer up to 2 months.
