Ingredients
1 cup grated almonds
1 1/4 cup all-purpose flour
1/4 cup confectioners sugar
1 egg yolk
1 whole egg
1/4 tsp salt
1/4 tsp cinnamon
4 tbsp unsalted butter, softened
Instructions
1. Preheat oven to 320°F. Line a baking sheet with parchment paper or spray with nonstick spray.
2. In a mixing bowl, combine grated almonds, flour, salt, cinnamon, and confectioners sugar. Mix well.
3. Add softened butter, egg yolk, and whole egg. Stir until the dough is well blended.
4. Transfer dough onto plastic wrap or wax paper, cover, and chill in the refrigerator for about 20 minutes.
5. After chilling, scoop tablespoon-sized pieces of dough and roll into a log shape, making the middle thicker and the ends thinner. Shape into a crescent.
6. Place shaped cookies on the prepared baking sheet and bake for 20 minutes.
7. Allow cookies to cool completely.
8. Dust the tops of the cooled cookies with confectioners sugar and enjoy.
