Description
Tender chicken, peppers, and onions slowly cooked in a crock pot with bold fajita seasonings for an easy, flavorful Tex-Mex meal.
Ingredients
2 lbs boneless, skinless chicken breasts
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 large onion, sliced
1 (14.5 oz) can diced tomatoes, drained
1 packet fajita seasoning mix (or 3 tbsp homemade)
2 cloves garlic, minced
1/2 cup chicken broth
Salt and pepper, to taste
Tortillas, for serving
Optional toppings: shredded cheese, sour cream, salsa, guacamole, fresh cilantro
Instructions
1. Place chicken breasts in the bottom of the crock pot.
2. Add sliced peppers, onion, diced tomatoes, garlic, and chicken broth over the chicken.
3. Sprinkle fajita seasoning mix evenly on top.
4. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.
5. Remove chicken, shred with two forks, then return to the crock pot and mix with vegetables and juices.
6. Serve hot in tortillas with your favorite toppings.
Notes
For extra flavor, squeeze fresh lime juice over the fajitas before serving.
Use whole wheat tortillas or lettuce wraps for a lighter option.
Leftovers can be stored in the fridge for up to 3 days or frozen for later use.
