Moist and flavorful pumpkin muffins filled with chunks of apple and topped with a buttery cinnamon streusel. A perfect fall breakfast or snack!
Ingredients
**For the Muffins:**
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup vegetable oil
2 large eggs
1 cup canned pumpkin puree
1 teaspoon vanilla extract
1 1/2 cups peeled and diced apple (such as Honeycrisp or Granny Smith)
**For the Streusel Topping:**
1/3 cup brown sugar
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
3 tablespoons unsalted butter, melted
Instructions
1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it well.
2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
3. In a large bowl, mix the granulated sugar, brown sugar, oil, eggs, pumpkin puree, and vanilla extract until well combined.
4. Gradually add the dry ingredients to the wet ingredients and mix just until combined.
5. Fold in the diced apples gently.
6. Divide the batter evenly among the prepared muffin cups.

8. Make the streusel by stirring together brown sugar, flour, and cinnamon in a small bowl. Add the melted butter and mix until crumbly.
9. Sprinkle the streusel evenly over each muffin.
10. Bake for 20–25 minutes or until a toothpick inserted into the center comes out clean.
11. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For best results, use firm, tart apples like Granny Smith or Honeycrisp.
These muffins freeze well. Let cool completely and store in a freezer bag for up to 2 months.
You can add 1/2 cup chopped nuts (like pecans or walnuts) for extra crunch.
