Ingredients
1 lb Italian sausage (casings removed)
1 tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
4 cups russet potatoes, peeled and cubed
4 cups chicken broth (low sodium preferred)
1 cup heavy cream
1 cup fresh spinach or kale, chopped
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
1/2 tsp crushed red pepper flakes (optional)
Salt and black pepper, to taste
Instructions
1. Heat olive oil in a large soup pot over medium heat.
2. Add Italian sausage, breaking it apart with a wooden spoon, and cook until browned.
3. Stir in onion and garlic, sautéing until fragrant and softened.
4. Add potatoes, Italian seasoning, and chicken broth. Bring to a boil, then reduce heat to simmer for 15–20 minutes, until potatoes are tender.
5. Stir in heavy cream, spinach (or kale), and Parmesan. Simmer 3–4 minutes until greens wilt and cheese melts.
6. Taste, adjust seasoning with salt, pepper, or red pepper flakes. Serve hot, garnished with extra Parmesan or fresh herbs if desired.

Use spicy sausage for a kick or mild for family-friendly flavor.
Dice potatoes evenly so they cook at the same rate.
Stir in the cream at the end to keep the broth silky, not broken.
