Ingredients
1 lb ground beef
1 small onion, diced

1 can diced tomatoes with green chilies (14 oz)
1 can black beans (15 oz), drained & rinsed
1 can corn (15 oz), drained
1 cup beef broth
1 cup heavy cream or half-and-half
2 cups shredded cheddar cheese
0.5 tsp smoked paprika (optional, for warmth)
salt and pepper, to taste
Optional toppings: sour cream, avocado slices, tortilla chips, cilantro, jalapeños
Instructions
1. In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
2. Stir in diced onion and garlic, sauté until softened.
3. Add taco seasoning and smoked paprika; stir to coat the beef evenly.
4. Stir in black beans, corn, and diced tomatoes with green chilies.
5. Add beef broth, bring to a boil, then reduce heat and let simmer for 10 minutes.
6. Reduce heat to low and stir in heavy cream, then slowly add shredded cheese, stirring until melted.
7. Adjust salt and pepper to taste. Serve hot with your favorite toppings.
